I hope you enjoyed the Mushrooms & Cumin Omelette last month. This month, celebrity chef Mark Earnden has given us another incredibly healthy treat - burgers. Obviously, not all recipes will suit all people. Everyone is different. This recipe is perfect for anyone who has a balanced nutritional requirement and can easily be adapted for someone who needs a higher protein and fat diet. Look through your Good Foods list in your Personal Diet Plan to make sure that you include the foods that are right for you.

Ingredients (Makes 10 x burgers)

500g minced beef or lamb
1/2 x medium sized onion
1 x pepper
2 x celery sticks
2 x tablespoon of ground nut oil
Cinnamon, thyme, basil

Preparation
Chop the pepper, celery and onion in small pieces
Place meat into a mixing bowl

Cook
Add the first spoonful of oil to a frying pan and throw the veggies in. Allow them to cook (not burn!) until they are soft
TIP - You can add cinnamon, basil, small amount of tomato puree, garlic puree or mustard to the vegetables whilst cooking

Once cooked add the vegetables to the uncooked mince and mix in thoroughly until the meat and vegetables make a paste and the mix "sticks" together. Mold the mix into little burgers, rolling the mix between your hands and then flattening into a burger Add second tablespoon of oil into the frying pan and cook the burgers on both sides until cooked all the way through

Plate
Put the burger on a plate with your favourite salads and maybe a few boiled new potatoes.

It is our great pleasure to welcome back Malc Innes – our resident expert Juice Expert. Malc has kindly agreed to share some of his favourite juice recipes.

My juices tend to work around what gets delivered in our veg box, which is delivered weekly from a local organic producer. The fresher the food, the more powerful the juice & this months juice is a real powerhouse.

serves 2
6 large carrots
2 apples
1 stick of celery
2 inches of cucumber
a cup full of spinach
a head of broccoli
half a lime or lemon


Wash everything and place in your masticating juicer. If using a centrifugal, place the spinach & broccoli in-between the apples and carrots & plunge them through slowly. That way you ensure you get the maximum juice from these vegetables.

Wash the juicer, then drink.

There's a lot of powerful veg in this juice & i find it keeps me fully energised for the whole of the day. If you want to feel awake, alert & alive then this is the juice to try. This is also one of the best ways to eat Broccoli ( 1 of natures most powerful veg ) Raw broccoli isn't digested by the body very easily & cooking it kills off many of the vital nutrients it has to offer. So juicing is by far the best option. Add a wheat grass to this juice & you'll feel like you can run a marathon.

Malc's juicing tip of the month...

Lemons & limes are so useful. There's no need to peel and if the juice tastes a bit too vegie, they really help to improve any bad flavour.They are also fantastic at cleansing & detoxing the body. Make sure you buy the unwaxed ones though & if you do find it makes the juice too sharp, then don't include the peel.

Q. I have been following my personal diet plan for 6 weeks now. When I started I had really bad digestion and eating was literally a painful experience. Since starting my plan I have noticed that my energy has definitely increased and I have lost 8lb in weight. Although my symptoms have eased off, I do still get problems occasionally. Can I get rid of them completely and how do I do it?

A. Okay, your personal diet plan will definitely help you but most people need a more in depth intervention to really get to grips with more serious digestive disorders. I would recommend that we have a chat about starting you on a programme in which you would work 1 on 1 with a SENSE Nutritional Consultant.
