Last month, Lucy gave us a great recipe for STARCH FREE GREEN SOUP. This month Celeb Chef Mark is back. This recipe is perfect to help with all those left overs! Obviously, not all recipes will suit all people. Everyone is different. This recipe is perfect for anyone who needs a higher carbohydrate diet or (in small quantities) for anyone as an accompaniment to their meal. Look through your Good Foods list in your Personal Diet Plan to make sure that you include the foods that are right for you.

Potato Salad

Ingredients
New potatoes
Mustard
Mayonnaise
Crème fraiche
Sun dried tomatoes
Natural yoghurt

Preparation
Wash the potatoes

Cook
Boil the potatoes until soft and cooked in the middle. Run under cold water to cool. Place in mixing bowl

TIPS – Add the following ingredients

1. ½ x Leek, teaspoon of mustard, tablespoon of mayonnaise and crème fraiche and mix
2. Sun dried tomatoes (mix with potatoes) and then mix with 3 x tablespoon of natural yoghurt and 1 x tablespoon of mayonnaise and drizzle over the mix

Plate
Perfect for sharing so make plenty and serve in a large bowl for everyone to tuck in. Or serve with fish or meat.
Cacao Nibs

So far we have featured 6 magnificent superfoods – Avocado, Hemp Seeds, Coconut, the amazing Greens for Life, Goji Berries and Bee Pollen. This month, we’re going to look at another nutritional phenomenon – Cacao nibs (raw, natural chocolate).

Well it’s Christmas time, which means that most people indulge a little. For many, chocolate is their indulgence of choice. There is no getting away from it, processed milk chocolate is not good for us. It’s normally high in sugar, artificial fats and milk amongst other things. However, cacao is a genuine superfood. Known as ‘food of the Gods’ by ancient South American tribes, the cacao bean is a wonderfully diverse source of nutrients, containing a huge range of beneficial properties. Cacao is rich in magnesium (a mineral that many people are deficient in) and sulphur (a great detox agent in heavy metal detoxification). It is a source of anti-oxidants such as (epicatechins & polyphenols). Cacao is also considered to be a ‘brain food’ increasing alertness. It is a versitile snack food that can be added to nuts, seeds and fruity snacks. Cacao nibs are quite bitter tasting and are especially good with sweeter tasting snacks (such as goji berries).

Juice of the month

When I invested in my first masticating juicer & made myself my first proper vegetable juice, I felt fantastic all day. Totally alert & bursting full of energy Since then I have chased that same feeling daily & try if possible to have a big vegetable juice every day. The following juice goes slightly against the grain for me as its possibly best suited as a nice relaxing evening drink to help you get off too sleep. However... It's Christmas! It's totally natural! & It's still good for you as long as you don't boil all the nutrients to death!

Serves 1

3 apples
1 pear
a pinch of cinnamon

Juice the apples & pear in a masticating or centrifugal juicer then pour into a pan & heat very gently. Add the cinnamon in to taste & pour into a mug before snuggling up in front of a nice open fire. Heaven!

Although some may worry that the fruit content of this juice is a bit too high, the cinnamon actually helps to reduce blood sugar levels. In fact Cinnamon is an all round good guy
Reduces blood sugar levels
Helps neutralise free radicals
Anti-clotting
Anti-inflammatory
Anti-microbial

Make friends with Spices. Used correctly they can be fantastic for your health!

Q. I think I already know the answer to this, but am I allowed to drink red wine, eat chocolate and treats during the Christmas holiday, because they are not on my list?

A. No they’re definitely not on your good foods list. In fact, they will be on your black list. However, remember the 80:20 rule. Stick as closely as you can to your good foods and proportions 80% of the time. If you can do that, the other 20% is free for you to do whatever you like. At Christmas time there are obviously more temptations. My advice would be not to go mad because it Christmas. Enjoy yourself when you are partying and don’t worry about what you’re eating. The rest of the time you can be sticking to your plan.
